Hi Tiffany,
I so appreciate your kind comment on my blog. I'm glad I tracked back to find you. What a cool idea! My husband and I started a 'Camping Cookbook' a while ago and have never finished it - so I'm going to watch you and encourage you! Do you mind to email me when you update your blog, only if its not a problem for you. My email is lalalime{at}hotmail{dot}com
Here's a recipe I made up for summer cooking. I make it in the toaster over, outside when its hot, but one could do it inside the house too. I like that it can make enough for 2-4 people, so no need to use the BIG oven!
Barb's Simple Summer Foil Packs
4 hot italian sausages
1 small onion, 1/2 inch thick rings
sliced red, yellow and green peppers
butter
Cut 4 pieces of tin foil. Lightly butter the center - about 6 inches long, 3 inches wide. Layer some onion slices on butter. Layer a few slices of each red, yellow and green peppers. Using a sharp (filet is ideal) knife, slice the casing of an italian sausage and remove the meat. Flatten the meat into a patty which covers the onion and peppers (aprox 6 inches long x 3 inches wide. Cover the veg. Repeat with the remaining three sausages. Place on the cook tray for the toaster oven. Bake at 400 degrees for 1/2 hour. To serve, lift each foil pack out of the tray, hold over something to catch the juice, and poke a hole underneath the foil pack, allowing the liquid to drain. Next, simply slide the veg and meat onto a plate! Voila, all you need is your side-dishes, and its DELISH!
Protein Bars (My favorite)
1 cup Protein Powder
1 cup Oatmeal
1 cup Krispies
3/4 cup Organic Peanut Butter
1/4 cup honey.
I have so many but one that really rocks and is close to my heart. IT's my great great grandmothers carrot cookies with orange frosting. I have to dig out the recipe and will get it to you in the next couple days :)
Thanks for your recent visits to my blog and your kind comments. I love comments!
I have a terrible time coming up with my favorite recipe, I like a lot of them! This one is a family favorite.

Spread meat mixture over spaghetti.

Bake at 425°F for 10 minutes or until cheese melts and is bubbly.
Remove from oven and let stand for 10 minutes.
I'll have to hunt down a few more for you. What kinds of foods doesn your family enjoy?
To the previous poster talking about the carrot cookies, my grandmother made those all the time! I'd love to have the recipe!
The easiest cookie recipe ever! This was actually a Pillsbury cook-off winning recipe
Cake Mix Cookies
1 pkg cake mix
1/3 cup oil
2 eggs
1 can of frosting
(any mix-ins you want)
preheat over to 375
combine cake mix, oil, and eggs; stir with a spoon until thoroughly moistened
bake at 375 for 6-8 minutes or until edges are light golden brown
cool 1 min then remove from sheets
spread frosting over warm cookies
Well I couldn't decide which type of recipe to do so hubby chose for me...
Beef Sandwiches
1 chuck roast about 3 lbs
1 16 oz. jar pepperocini do not drain
1-2 tbsp garlic
Rolls~I prefer hoagie
Cheese~I use provolone
Put chuck roast in crockpot with garlic and whole jar of pepperocinis. Cook on Low for about 8 hours. Shred beef and put it back in on warm until you are ready to eat. Place beef on hoagie roll top with cheese and place under the broiler until cheese is melted.
To kick it up a bit add the peppers under the cheese.
I still can't find my cookie recipe so in the meantime here's one that's not the healthiest in the world but you can make it with sugar free and fat free ingredients to cut down on fat and sugar. It is always a hit with adults and kids....especially men. I have been making it for almost 20 yrs.
Mississippi Mud Dessert
First Layer
1 stick margarine
1 cup flour
1/2 cup chopped pecans ( you can leave nuts out if you have allergies or non-nut lovers in the family)
Mix all ingredients together well and spread in bottom of a 9 x 13 pan. Bake at 325 for 25 min. Cool.
Second Layer
1 8-ounce pkg cream cheese
1 c. powdered sugar
1 c. frozen whipped topping, thawed
Mix all three ingredients together and spread over cooled crust.
Third Layer
3 c milk
1 TBS vanilla
2 small packages instant chocolate pudding
Mix all ingredients together and spread over second layer. Spread additional whipped topping (about 2 cups or so) over top of third layer and sprinkle w/shaved chocolate or crushed peanut butter cups. Refrigerate until ready to serve.
The only one I can immediately and quickly put down (since it's on my blog) is my chicken pot pie.
Chicken Pot Pie
8-10 Chicken tenderloins cooked, chopped into bite-size pieces
1 can cream of chicken and herb soup
1 can cream of celery soup
1 150z can Veg-All
1/3 Cup of milk
2 Ready-made pie crusts, room temp.
1 Egg
1 9 in. glass pie dish
Preheat oven to 375.
In a large bowl mix the first five ingredients together.
Press first pie crust evenly into the bottom and sides of dish.
Pour mixture into dish, spreading evenly.
Place second pie crust over top, lightly score the center, and pinch edges together with the bottom crust. (I fold over the edges first all around rather than cutting off the excess.)
Beat one egg in a small bowl, brush it evenly over the top crust (don't forget the edges).
Place dish on a cookie sheet or shallow pan, bake 45min.-1hr., depending on your oven.
You may need to cover loosely with foil if the top is browning too much too quickly.
Allow to cool at least 10min. before cutting.
Well, I sent you method for banan bread in the crock pot, so I figured I'd post the recipe I used. It's really yummy!
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 large eggs, beaten
2 1/3 cups mashed very overripe bananas
Preheat oven to 350°.
Lightly grease 9 x 5 loaf pan.
In large bowl, combine flour, soda and salt.
In separate bowl, cream together butter and brown sugar.
Stir in eggs and mashed bananas until well blended.
Stir banana mixture into flour mixture; stir just to moisten.
Pour batter into prepared loaf pan.
Bake in preheated oven for 60-65 minutes until a toothpick inserted into center of loaf comes out clean.
Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
